  • 200 g tomatoes, diced

  • 100 g white onion, finely chopped

  • 40 g coriander, chopped

  • 500 g Santa Maria Guacamole

  • 200 g spinach, fresh

  • 3 tbsp oil

  • 600 g pulled oats, natural

  • 4 tbsp Santa Maria BBQ Rub Chipotle & Citrus

  • 100 ml Santa Maria Bourbon BBQ Sauce

  • 500 g black beans, drained

  • 500 ml Santa Maria Rio Grande Salsa

  • 5 Santa Maria Soft Tortilla 8”

  • 1 bag Santa Maria Nachos, 475g

  • 300 g white cheese, crumbled

How to prepare

Preparation

1. Chop the tomatoes, white onion and coriander.
2. Put the defrosted guacamole in a blender together with the spinach. Mix until the guacamole is smooth but still have a few pieces of spinach left.
3. Heat oil in a pan. Then fry the pulled oats until it gets a nice crispy texture. Add the rub spice mix and BBQ Sauce. Give it a stir and remove from the heat.
4. Heat the salsa together with the black beans in a saucepan. Mix them quick in a blender to get a slightly coarse “refried beans”.
5. Cut the tortillas in bite sized pieces and put on a baking sheet. Bake in oven at 200°C for about 5 minutes, until they are roasted and crispy. Add the nachos when there are 2 minutes left.
6. Fill a portion paper tray with heated nachos and baked tortilla chips. Arrange the cooked pulled oats in the middle and add the chopped tomatoes, refried beans and guacamole. Then add salsa, crumbled white cheese, finely chopped onion and coriander
