Roasted Corn
Sweet corn roasted with chili, zucchini and green onions.
Ingredients
Number of portions
500 g sweetcorn
3 spring onions
1 courgette
2 tbsp vegetable oil
40 g Santa Maria Chili Rub
How to prepare
Finely slice the spring onions.
Cut the courgette into small dices.
Fry the corn in oil over high heat until it’s nicely coloured, about 5 minutes.
Add the courgette, spring onions and Chili Rub and fry for another 5 minutes.
