Club Quesadilla with Chicken

New take on the classic club sandwich, made with crispy tortillas, chicken, bacon, cheese and spicy toppings. A great late night snack!

Ingredients

Number of portions

1 Santa Maria 10” Tortilla Wrap
5g Chicken breast, sliced fillet
2g Santa Maria BBQ Rub Steakhouse
3g Oil
30g Santa Maria Salsa Roja
60g Cheese, grated

Assemble:
20g Crispy lettuce
50g Bacon, fried crispy

Topping:
1.5g Mayonnaise
7.5g Santa Maria Salsa Roja
5g Santa Maria Chili Explosion

Garnish:
1.5g Tomatoes, chopped
5g Spring onion, chopped

How to prepare

  1. Mix the ingredients for the topping sauce and set aside.

  2. Fry the sliced chicken breast in oil and season with BBQ rub and set aside.

  3. Fry the bacon until crispy at 225°C in the oven, placed side by side on a tray with paper.

  4. Put chicken on half of the tortilla, sprinkle with cheese and dress with salsa. Fold the tortilla into a half circle.

  5. Fry on medium heat, both sides until the cheese is melted.

  6. Cut each tortilla into 3 slices.

  7. Assemble the slices with bacon, lettuce and mayo between the layers.

  8. Top and garnish with tomatoes and spring onion.

Tips:

The quesadillas can be prepared and folded if kept covered in the fridge until serving time. Just fry, cut, plate and garnish.
