Alabama BBQ Chicken Salad

Grilled chicken on mixed greens with radishes, cucumbers, carrots, nuts, blue cheese and Alabama white BBQ dressing.

How to prepare

1. Prepare the chicken: Brush the chicken breasts with 2 tbsp (30 ml) olive oil, sprinkle with half the salt and pepper. Preheat grill or grill pan to medium-high heat. Grill chicken 6–8 minutes per side, or until cooked through (internal temperature 75°C). Let rest 5 minutes, then slice thinly. 

2. Prepare the vegetables: Wash and dry the lettuce. Divide radishes and cut cucumbers in chunks. Julienne the carrots. Place all in a large salad bowl or platter. 

3. Put nuts on a baking tray and roast at 180°C for 8–10 minutes, stirring once, until golden and fragrant. Mix with honey and let cool, then chop roughly. 

4. Add sliced grilled chicken on top of the vegetables. Drizzle the dressing evenly. Sprinkle with roasted nuts and crumbled blue cheese.  

 

Tips!

The blue cheese can be replaced with feta.  For extra crunch, add thinly sliced apples or pears.
